I know this may seem like a dumb question, but are these usually a standard CJ body and frame with a VW motor?

Not a dumb question. They are generally a VW chassis and an aftermarket flat fender jeep body (there were different bodies used on different models). You can see some assembling instructions for a VEEP here: http://www.ewillys.com/2014/01/09/veep-brochure-and-assembly-instructions/
